Parmesan and Garlic Baked Cod

Ingredients
- 1 lb or 2 filets of fresh, wild caught cod
- ¾ cup reduced fat grated parmesan cheese
- 2 tsp ground parsley
- 1 tsp garlic powder
- 1 tsp paprika
- 2 T extra virgin olive oil
- ½ lemon (juice and zested)
Steps
- Preheat oven to 450. Line baking sheet with parchment paper.
- In small bowl, mix together cheese and spices.
- Wash lemon, pat dry. Cut in half and then cut one of the halves in half again. Zest one of the halves and add to cheese mixture.
- Rinse fish, pat dry. Place on baking sheet. Drizzle 1 T olive oil on each piece of fish.
- Evenly sprinkle cheese mixture on top of each piece of fish. Rub mixture evenly into fish (both sides).
- Bake for 15 to 20 minutes. Squeeze the other two slices of lemon across baked fish.
- Serve and enjoy!
