Parmesan and Garlic Baked Cod

Ingredients
  • 1 lb or 2 filets of fresh, wild caught cod
  • ¾ cup reduced fat grated parmesan cheese
  • 2 tsp ground parsley
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 2 T extra virgin olive oil
  • ½ lemon (juice and zested)
Steps
  1. Preheat oven to 450. Line baking sheet with parchment paper.
  2. In small bowl, mix together cheese and spices.
  3. Wash lemon, pat dry. Cut in half and then cut one of the halves in half again. Zest one of the halves and add to cheese mixture.
  4. Rinse fish, pat dry. Place on baking sheet. Drizzle 1 T olive oil on each piece of fish.
  5. Evenly sprinkle cheese mixture on top of each piece of fish. Rub mixture evenly into fish (both sides).
  6. Bake for 15 to 20 minutes. Squeeze the other two slices of lemon across baked fish.
  7. Serve and enjoy!
