Chile Cumin Rice

  • ½ cup diced onion (1 small)
  • 1 cup diced red bell pepper (1 medium)
  • 1 cup diced green bell pepper (1 medium)
  • 2 tbsp butter
  • 2 garlic cloves, minced
  • ½ cup diced mild green chile
  • 1 tsp ground cumin
  • ½ tsp salt
  • 1 ½ cups uncooked white rice
  • 1 ½ cups hot chicken broth
  • Instructions
  • Sauté onion and bell peppers in butter until onion is limp but not brown. Add the garlic, cumin, salt, green chiles, rice, and chicken broth. Mix well and cover the saucepan.
  • Bring to a boil, reduce heat to low, and cook for about 20 minutes or until the rice is tender and liquid is absorbed. Check about 10 to 15 minutes in, and add a couple tablespoons water if needed.
