Edamame Hummus Wrap for Two
Ingredients
  • 6 ounces frozen shelled edamame (generous 1 cup), thawed
  • 2 tablespoons lemon juice
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon tahini
  • 1 small clove garlic
  • ¼ teaspoon ground cumin
  • ¼ teaspoon salt
  • ¼ teaspoon ground pepper
  • 1 cup very thinly sliced green cabbage
  • ¼ cup thinly sliced orange bell pepper
  • ½ scallion
  • 2 tablespoons chopped fresh parsley
  • Spinach or whole-wheat tortillas
