Ingredients
  • 2 tbsp extra-virgin olive oil
  • ½ large yellow onion diced
  • 1 & ¼ cup water if needed
  • 2 & ½ cups of garlic cloves about 100 cloves, give or take
  • ½ tsp red pepper flakes
  • Kosher salt and freshly ground black pepper to taste
  • 1 cup coconut milk I used light, but any variety works
  • 2 15 oz cans of butter beans drained and rinsed
  • 1 cup (pre-chopped) loosely packed curly parsley finely chopped, plus some for garnish
  • ½ lemon for juicing
  • 2 ounces fresh parmesan for serving
  • 4 to 5 slices fresh bread of choice for serving
