Baked Chickpeas with Butternut Squash
Ingredients
  • 2 15oz Garbanzo Beans drained & rinsed
  • 1.5 lb butternut squash
  • Peeled & cubed into ½” pieces (4C)
  • 2T Olive Oil
  • ½C Milk (Almond Breeze?) (ANY)
  • ¼C ½ & ½
  • 1T Garlic
  • 6 to 8 fresh sage leaves - , rough chop
  • S & P To Taste
  • 2t fresh thyme
  • ½C Grated Parmesan cheese
  • (Spread on top of the casserole pan)
