Meatloaf (a la Kristen)
Ingredients
  • subheading: Meatloaf:
  • 2 cloves of garlic, minced
  • 1 onion, finely chopped
  • 1 lb. ground beef
  • 1 lb. ground pork
  • ⅔ C. oatmeal
  • ⅓ C. milk (not skim milk)
  • 2 eggs
  • 2 T. ketchup
  • 1 T. parsley
  • 2 t. Worcestershire sauce
  • 1 t. salt
  • 1 t. pepper
  •  
  • subheading: Glaze:
  • 1 C. ketchup
  • ¼ C. packed brown sugar
  • Dash of cider vinegar/red wine vinegar
Steps
  1. Preheat oven to 350° F. Whisk glaze ingredients together until sugar dissolves. Set aside.
  2. Cook the onion until golden, about 5 to 7 minutes. Add the garlic and cook until fragrant, then transfer to large bowl. Add all of the other meatloaf ingredients to the onions and mix it all together. It’s more fun if you use your hands to mix - not to mention there will be fewer dishes to wash afterwards. Line a rimmed baking sheet with aluminum foil and coat lightly with cooking spray. Put the meatloaf mix in a bread pan to shape, then dump upside down on foiled baking sheet.
  3. Broil meatloaf on the upper rack until golden brown, about 5 minutes. Brush about ¼ C. glaze mixture on top of meatloaf and broil for about 3 more minutes. Brush the meatloaf with the remaining glaze and transfer meatloaf to the middle rack. Change the oven temperature to 350° F and bake the meatloaf for 40 to 45 minutes, until cooked through.
  4. Transfer the meatloaf to a cutting board and tent with foil. Let it rest for 20 minutes, then enjoy!
