Ingredients
  • 1 cup self rising flour (I use Gold Medal)
  • ½ cup non fat Greek yogurt (I use Fage or Chobani)
  • ¼ tsp garlic powder
  • 1 large egg
  • ½ lb. 96% ground lean ground beef or skinless-boneless chicken breast (cut into bite size pieces)
  • 1 Tbsp taco seasoning
  • ⅔ cup mild red enchilada sauce ( I use Old El Paso sauce)
  • ½ cup canned black beans ( drained and rinsed)
  • 1 small tomato, diced
  • ½ cup light cheddar cheese ( I use Trader Joe’s lite three cheese blend)
  • toppings such as: non fat sour cream or plain yogurt, olives, or green onions for garnish
