Sumac-Spiced Chicken (Musakhan)
Ingredients
  • 2 pounds boneless, skinless chicken thighs, trimmed

  • 1 large yellow onion, halved lengthwise and thinly sliced
  • 4 garlic cloves, thinly sliced
  • 4 tablespoons ground sumac, divided
  • 2 teaspoons sweet paprika
  • 3 cups water
  • 4 8-inch pita bread rounds
  • ½ cup flat-leaf parsley leaves, chopped
  • Tahini, to serve
