Baked Summer Squash

Ingredients
  • 2 lbs. summer squash*
  • ¼ c. olive oil**
  • ½ c. grated parmesan cheese
  • ⅓ c. breadcrumbs
  • Salt and pepper
Steps
  1. Preheat the oven to 350 degrees.
  2. Thinly slice the squash. Lightly coat a pie pan or small casserole dish with olive oil, and arrange half of
  3. the squash in the bottom of the pan. Drizzle with olive oil; sprinkle with half of the parmesan and
  4. breadcrumbs. Arrange the remaining squash on top, and add the rest of the oil, cheese, and
  5. breadcrumbs.
  6. Cover with foil and bake for 30 minutes. Remove the foil and bake for 5 more minutes until lightly
  7. crisped on top
