  • ¼ cup (22g |0.7oz) cocoa powder
  • ½ cup (120g | 4oz) butter, melted

  • (250g | 8oz) packages full fat cream cheese
  • 1 cup (250g | 8oz) 14% fat sour cream
  • 1 cup (200g | 7oz) granulated sugar
  • 1 tsp pure vanilla extract, ( store-bought or homemade)
  • ½ tsp salt ( I use Himalayan salt)
  • 4 large eggs
  • 3 tbsp corn starch
  • 2-½ cups (375g | 13.2oz) dark chocolate, melted
  • ¾ cup (180ml) stout beer (I used Dieu du Ciel's Aphrodisiaque)
  • subheading: FOR THE WHITE CHOCOLATE BAILEY'S GANACHE:
  • 2-½ cups (425g | 15oz) white chocolate, finely chopped
  • 1 cup (240ml) Bailey's Irish Cream
  • 2 tbsp butter, softened

  • ½ cup (120ml) salted caramel *see note
