Keto Orange Zebra Cheesecake - No Bake

Ingredients
  • subheading: Base:
  • 60g Almond flour
  • 70g walnuts (Chopped Up)
  • 50g butter (Melted)
  • 2 tsp cinnamon
  • 3 tbsp Erythritol with Stevia Sweetener Powdered or Powdered Natvia or Monk fruit

  • subheading: Orange Cheesecake Zebra Layer:
  • 250 g cream cheese
  • 125 ml sour cream
  • 75 ml full cream
  • 4 tbsp Erythritol with Stevia Sweetener Powdered or Powdered Natvia or Monk fruit
  • 2 tsp Orange Essence
  • ½ tsp Orange food colouring (Add more to get the colour you want)
  • 1 tbsp pure Lemon Juice (1 large Lemon)
  • 1 tsp Gelatin (Unflavored)
  • 3 tbsp Water (Boiled)
  •  
  • subheading: Vanilla Cheesecake Zebra:
  • 250 g cream cheese
  • 125 ml sour cream
  • 75 ml full cream
  • 4 tbsp Erythritol with Stevia Sweetener Powdered or Powdered Natvia or Monk fruit
  • 2 tsp Vanilla Essence
  • 1 tbsp pure Lemon Juice (1 large Lemon)
  • 1 tsp Gelatin (Unflavored)
  • 3 tbsp Water (Boiled)
Steps
  1. subheading: For the Base:
  2. Line the 9-inch spring-form pan with baking paper, bottom and sides.
  3. Add all the base ingredients, the 60g Almond flour, 70g walnuts (Chopped Up), 50g butter (Melted),
  4. 2 tsp cinnamon, 3 tbsp Erythritol with Stevia Sweetener Powdered into a bowl and mix them all up or add to a food processor and blend for about a minute.
  5. Take the dough with your hands or spoon and add it to a 9-inch spring-form pan. Press with your fingers or spoon and spread the dough all over to make the base.
  6. subheading: For the Vanilla Cheesecake:
  7. Prepare the Gelatin first, add 3 tbsp of hot boiled water to a cup, then add the 1 tsp Gelatin and stir in well, set aside. (If it starts to thicken, put it in a microwave for 60 seconds, then give it a stir.)
  8. In a bench mixing bowl or food processor, add the 250 g cream cheese, 125 ml sour cream, 75 ml full cream, 4 tbsp Erythritol with Stevia Sweetener Powdered, 1 tbsp pure Lemon Juice
  9. and start to mix all the ingredients up and slowly add the prepared melted gelatin in the mix, while beating the mixture up, until it is creamy smooth, don't over mix or blend.
  10. Pour the vanilla mixture into a large jug and set aside.
  11. (If it's too thick, place mixture into a microwave proof jug, place in the microwave and heat for 30 seconds.)
  12. subheading: For the Orange Cheesecake:
  13. Prepare the Gelatin first, add 3 tbsp of hot boiled water to a cup, then add the 1 tsp Gelatin and stir in well, set aside. (If it starts to thicken, put it in a microwave for 60 seconds, then give it a stir.)
  14. In a bench mixing bowl or food processor, add the 250 g cream cheese, 125 ml sour cream, 75 ml full cream, 4 tbsp Erythritol with Stevia Sweetener Powdered, 2 tsp Orange Essence, 1 tsp Orange food colouring, 1 tbsp pure Lemon Juice and start to mix all the ingredients up and slowly add the prepared melted gelatin in the mix, beat it until it is creamy smooth, don't over mix or blend.
  15. Pour the orange mixture into a large jug and set aside.
  16. (If it's too thick, place mixture into a microwave proof jug, place in the microwave and heat for 30 seconds.)
  17. To create cheesecake Zebra design, pour quarter of orange mixture into center of pan over the base, holding vanilla mixture about 1 foot above pan, pour about quarter of mixture directly into center of orange mix (pouring from this height will cause batter to be pushed against outer edge of pan forming a Zebra design). Keep repeat this process three times, decreasing amounts of mixture each time and pouring from high above pan only into center, finishing with white cheesecake mixture.
  18. Place the finished cheesecake into the fridge to set.
  19. Once set, remove from the pan, cut and enjoy.
