Applesauce Ginger Cake with Maple Glaze
Ingredients
  • 2 cups white whole wheat flour or whole wheat pastry flour
  • 1 cup sugar
  • 2 tablespoons crystallized (candied) ginger, chopped small (about ¾ ounce)
  • 1 tablespoon cornstarch
  • 2 teaspoons baking soda
  • 1 ½ teaspoon ginger powder
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • ⅛ teaspoon cloves
  • 2 ¼ cups unsweetened applesauce
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • Glaze: ¼ cup maple syrup, 1 teaspoon cornstarch, pinch ginger powder
  • Additional candied ginger for serving (optional)
