Kale and Sweet Potato Brown Rice Bowls
Ingredients
  • 1 large sweet potato, cut into ¼ inch chunks
  • 1 teaspoon olive oil , or avocado oil
  • 1 cup cooked brown rice, or quinoa
  • 2 cups steamed kale
  • ½ cup cooked chickpeas
  • subheading: CREAMY PEANUT SAUCE:
  • ¼ cup peanut butter
  • 1 clove garlic, chopped
  • 2 teaspoons fresh ginger, chopped
  • 2 Tablespoons rice vinegar
  • 2 Tablespoons low sodium tamari or soy sauce
  • 2 Tablespoons maple syrup
  • a pinch of cayenne pepper, optional
  • water, to thin
