Crostini with Prawns On Parmesan Pea Puree

  • 1 tbsp extra virgin olive oil
  • ¼ tsp each salt and pepper
  • 1½ tbsp finely chopped mint leaves
  • 1 tbsp lemon juice
  • subheading: PRAWN TOPPING:
  • 500g small cooked prawns, unpeeled (or 250g peeled)
  • extra virgin olive oil, for drizzling
  • 1½ tbsp finely chopped parsley
  • 1½ tbsp finely chopped large red chilli
