Fluffernutter Cookies are soft and chewy peanut butter cookies filled with marshmallow fluff for a sweet and ooey gooey treat!

½ cup (129 g) creamy peanut butter

½ cup (1 stick / 113 g) unsalted butter, room temperature

1 cup (200 g) light brown sugar, packed

1 large egg, room temperature

1 teaspoon vanilla extract

1½ cups (187.5 g) all-purpose flour

1 teaspoon cornstarch

½ teaspoon kosher salt

1 cup marshmallow fluff, or marshmallow creme
