Delicious and cheesy Omelet (R1 approved) prep time: 10min Cook time: 10min

Ingredients
  • 1 whole egg
  • 4 egg whites
  • ½ cup of Onion
  • ½ cup of Tomatoes
  • ½ cup of Muchrooms
  • Pink Salt and Pepper
  • Home Made Salsa (see my salsa recipe)
  • 1 tbsp of Healthy Fat oil option (coconut, grapeseed or avocado oil)
Steps
  1. In a frying pan add your healthy fat option along with your chopped onion and mushrooms (you do not have to saute these if you prefer them raw before adding them to your omelet)
  2. Place a pot of water on stove and bring to a boil
  3. In a mixing bowl add your egg and egg whites, cooked or raw onion and mushrooms, tomatoes, salt and pepper and nutritional yeast (for the cheesy effect)
  4. Pour mixture into a lip-lock bag, yes zip lock bag. Be sure to get as much air out of the bag before sealing it completely. Place bag in boiling water and let cook until eggs do not seem runny (depending on how much you add to your omelet it can take less or more time to cook based on its continents)
  5. Pour Omelet onto your plate top with your home made salsa and ENJOY!
