  • 5oz (150 grams) fresh mozzarella (or from ½ to ⅓ cup shredded firm mozzarella)
  • 2 handful of baby arugula, washed
  • 1 Tbsp extra virgin olive oil, to drizzle
  • salt and pepper, to taste
  • 3 to 4 Tbsp shaved parmesan
