Baked Stuffed Artichokes with Garlicky Grains and Feta

  • 3 tablespoons chopped fresh parsley, plus extra for garnish
  • 1 medium lemon, zested and juiced
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 3 cups low-sodium vegetable broth
  • 2 bay leaves
  • 3 tablespoons chopped fresh dill, plus extra for garnish
