Korean braised chicken

Ingredients

  • 500g chicken breast, cut into pieces
  • ¼ cup soy sauce
  • ⅛ cup sugar
  • 1 tbsp oyster sauce
  • 1 tbsp rice wine (mirin)
  • ½ tbsp minced garlic
  • ½ tbsp minced ginger

  • 1½ cups water (for boiling the chicken)
  • 1 potato, cut into chunks (about 1.5 inches)
  • 1 large carrot, chopped
  • 1 sweet potato, cut into chunks
  • 1 cup shiitake mushrooms, sliced
  • 1 onion, chopped
  • Dried whole red chili peppers, to taste (optional)
  • 1 cup glass noodles (dangmyeon), soaked in warm water for 30 minutes and drained
  • subheading: For The Finishing:
  • Green chili peppers (or jalapenos), sliced (optional)
  • 1 green onion, chopped
  • 2 tablespoons sesame oil
  • 1 tablespoon sesame seeds
