Eggplant Bolognese
Ingredients
  • 1 large eggplant, diced into small cubes
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 carrot, finely chopped
  • 1 celery stalk, finely chopped
  • 1 can (28 oz) crushed tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • ¼ cup fresh parsley, chopped
  • ¼ cup grated Parmesan (optional for garnish)
  • Cooked pasta of your choice (spaghetti or fettuccine work well)
