Ingredients
  • Butter, 2 tbsp. unsalted, for greasing (if you only have salted, reduce the salt to just a pinch)
  • Whole milk, ¾ c., slightly warmed (15 seconds in the microwave or a few minutes sitting in a measuring cup in a pan of hot water will do the trick)
  • All-purpose flour, ¾ c.
  • Salt, ¾ tsp.
  • Eggs, 3 large, at room temperature (warming briefly in a bowl or pan of hot tap water-perhaps alongside the milk-works well)
  • Cheese, 1 to 1½ oz. Gruyère, cheddar, goat cheese, or Parmesan, finely grated
  • Fresh herbs, 1 tbsp. finely chopped (chives, garlic chives, thyme leaves, and savory-alone or in combination-are great options)
