Simple Winter Salad
Ingredients

  • ½ cup crumbled feta cheese
  • ½ cup pomegranate arils

  • 3 cups peeled and cubed butternut squash
  • 1 Tablespoon avocado oil or olive oil
  • ½ teaspoon sea salt
  • Pinch of pepper
  • subheading: WHITE BALSAMIC VINAIGRETTE:
  • ½ cup extra-virgin olive oil
  • ¼ cup white balsamic vinegar
  • ½ Tablespoon honey or maple syrup, plus more to taste
  • 1 clove fresh garlic, minced or ¼ teaspoon garlic powder
  • ½ teaspoon sea salt
  • ¼ teaspoon ground black pepper
