Roasted Red Potatoes
Ingredients
  • 1lb Baby Red Potatoes (4 medium size potatoes)
  • 2Tbsp Extra Virgin Olive Oil
  • ½ Tsp Paprika
  • 1Tsp Salt
  • 1Tsp Pepper
  • 2Tsp Onion Powder or Onion Flakes
  • 2Tsp Garlic Powder
  • ½ lemon squeezed
  • 2 TBS Parmesan cheese (sprinkle liberal amount on top)
Steps
  1. Cut potatoes in quarters and place in a 8x8 baking dish. Mix olive oil and add the rest of the ingredients and pour over potatoes and mix until all potatoes are covered. Sprinkle with cheese and cover with foil. Bake at 400 for 50 min uncover and bake for 10 minutes longer.
Notes
  • You can also bake these at 375 degrees if cooking with other foods on the same sheet pan for 15 minutes, stir and cook them for another 10 minutes. You can also crisp them up if desired by turning on the broiler for a few minutes.
