Fried Chicken and Waffles with Bourbon Maple Syrup
Ingredients

  • 1 qt. low-fat buttermilk
  • ¼ cup seasoned/Lawry's or Kosher salt

  • 1 to 2 tbsp seasoned salt
  • 2 tsp black pepper
  • 1 tbsp onion powder
  • 1 tsp chili powder
  • 2 tsp paprika
  • 1 tsp cayenne pepper

  • subheading: YEASTED WAFFLES:
  • 1¾ cup of warm milk (105 to 110° F)
  • 8 Tbsp unsalted butter (1 stick), cubed
  • 1½ Tsp instant or active dry yeast
  • 2½ cups AP flour
  • 8 Tbsp granulated sugar (use less, if desired)
  • 1 Tsp Kosher salt
  • 2 large egg yolks (room temp)
  • 2 Tsp vanilla extract
  • 2 large egg whites (whipped to soft peaks)

  • subheading: BOURBON MAPLE SYRUP:
  • 1 cup maple syrup
  • ¼ cup honey
  • ¼ cup bourbon
  • ½ tsp vanilla extract
  • 2 tbsp light brown sugar
  • 1 tsp crushed red pepper flakes (can add more to taste)
  • ¼ tsp cracked black pepper
  • ½ to 1 tsp Kosher salt
  • 2 tbsp unsalted butter
