  • 2 cups green peas (fresh or frozen)
  • 1 tablespoon olive oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 4 cups vegetable broth (low-sodium, if possible)
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • ½ teaspoon ground cumin
  • Salt and black pepper, to taste
  • Fresh parsley or chives, chopped (for garnish)
  • Instructions
  • If using fresh peas, blanch them in boiling water for 2 to 3 minutes, then transfer them to an ice bath to stop the cooking process. If using frozen peas, skip this step.
  • In a large soup pot or Dutch oven, heat the olive oil over medium heat. Add the finely chopped onion and sauté until it becomes translucent and slightly browned.
