Rosti Topped Chicken, Pancetta & Pesto Pie
Ingredients
  • 2 tbsp olive oil
  • 200 g pancetta, diced
  • 8 boneless, skinless chicken thighs, diced
  • 1 large onion, finely sliced
  • 1 leek, finely sliced
  • 2 cloves garlic, grated
  • 280 ml chicken stock
  • 250 g baby spinach
  • 3 tbsp pesto
  • 4 tbsp half-fat crème fraîche
  • 1 tbsp cornflour
  • subheading: For the rosti topping:
  • 800 g floury potatoes
  • 30 g butter, melted
  • 60 g Gruyère
