Pineapple grilled chicken
Ingredients
  • 4 chicken breast halves without skin
  • 1 cup pineapple juice
  • ⅔ cup sherry
  • 2 TBS brown sugar
  • 1 TBS rosemary, fresh
  • 1 clove garlic, minced
  • 1 TBS oil
  • 1 cup onion, chopped
  • 1 cup mushroom, chopped
  • 1 cup pineapple, chopped
  • 4 ozs, Monterey Jack cheese, grated

Steps
  1. Mix first 6 ingredients and put in plastic bag and marinate overnight.
  2. Remove chicken from marinade and grill 4 minutes on each side.
  3. Saute onion and mushrooms in oil until they are soft but not browned.
  4. When chicken finished cooking, put in a baking dish; top with onion, mushroom and pineapple.
  5. Cover with cheese and put under the broiler until melted.
