  • 1 small eggplant, diced
  • 7 ounces dry orzo

  • 1 teaspoon each: smoked paprika, dried oregano, dried thyme, dried basil, chili flakes
  • 5 ounces grated mozzarella
  • fresh thyme, for sprinkling
