  • 1.7 kg deboned leg of lamb, trimmed of excess fat
  • 120 g brown onion, peeled and halved
  • 5 garlic cloves, peeled
  • 1 tbsp mild paprika
  • 1 tbsp of fresh oregano leaves
  • 3 sprigs of fresh rosemary leaves
  • 4 strips of lemon rind
  • ½ tbsp salt
  • 2 tsp dried dried oregano leaves
  • 1 tsp dried mint leaves
  • 1 tsp dried basil leaves
  • ½ tsp black cracked pepper
