Roasted Salmon Bites
Ingredients
  • 1 lb skinless boneless salmon filets, cut into 1-inch cubes
  • 2 tsps cumin
  • 2 tsps smoked paprika
  • 2 tsps garlic powder
  • 2 tsps onion powder
  • ½ tsp sea salt
  • 1 Tbsp GF flour, Arrowroot powder, or cornstarch
  • 1 Tbsp avocado oil, or olive oil
  • 2 green onions, sliced on diagonally
  • chopped fresh cucumber, for serving
  • subheading: Cilantro-yogurt sauce:
  • 1 bunch fresh cilantro leaves, roughly chopped
  • 1 cup plain Greek yogurt or unsweetened coconut yogurt
  • 1 clove of fresh garlic, peeled
  • 1 Tbsp fresh lemon or lime juice
  • sea salt and ground pepper, to taste
