  • 2 zucchini, halved lengthwise
  • 2 summer squash, halved lengthwise
  • 1 red onion, cut crosswise into ½-inch slices
  • 1 medium eggplant, cut crosswise into ½-inch slices
  • 1 pound asparagus, trimmed
