Ingredients
  • 250g chorizo sausage (see note)
  • 1 tablespoon olive oil
  • 500g Lilydale Free Range Chicken Thigh, trimmed, cut into 5cm pieces
  • 1 large brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 1 red capsicum, finely diced
  • 1 teaspoon ground turmeric
  • 1 ½ teaspoons ground cumin
  • 2 tbl smoked paprika
  • 1 ½ cups white rice
  • 400g can chopped Italian tomatoes
  • 2 cups Massel chicken style liquid stock
  • 1 cup frozen peas
  • ½ cup fresh flat-leaf parsley leaves, roughly chopped
