Healthy Lemon Blueberry Breakfast Strata {Gluten Free}
Ingredients
  • 3 tbsp grass-fed butter or ghee, melted and cooled
  • 4 pastured or organic eggs
  • 1 ½ cups organic whole milk
  • ½ cup real maple syrup or warmed honey
  •  
  • ½ cup Nancy's organic cultured whole milk cottage cheese or lowfat cottage cheese
  • 1 loaf day old gluten free bread, cut into 1" cubes
  • Juice and zest of 1 lemon
  • 1 ½ tsp vanilla extract
  • 2 ½ cups fresh blueberries, divided
