A Grainy Side Without the Grains
Ingredients
  • 1 medium head cauliflower, 1 ¼ to 1 ½ pounds
  • 1 tablespoon olive oil
  • ½ teaspoon kosher salt, plus more to taste
  • 1 large garlic clove, minced
  • 1 teaspoon sweet paprika
  • 1 teaspoon ground cumin
  • ½ teaspoon ground coriander
  • ¼ teaspoon crushed red pepper or Aleppo chile flakes
  • 2 to 3 thin scallions, white and green parts thinly sliced
  • 1 sweet red pepper, seeded and finely diced
  • 1 small poblano pepper, seeded and finely diced
  • 1 red or green jalapeño pepper, stemmed and seeded, finely chopped
  • 1 cup Italian parsley leaves, chopped
  • ½ cup cilantro leaves, chopped
  • ½ cup mint leaves, chopped
  • Finely grated zest of 1 lemon
  • ¼ teaspoon freshly ground black pepper
