Homemade Panamanian Tamale Recipe by Marionavelarde
Ingredients
  • Dough
  • 2 cups cornmeal
  • 5 cups chicken stock (chicken stock)
  • 6 tbsp vegetable oil painted with achiote
  • to taste Salt and pepper
  • Filled
  • 3 breast fillets deboned
  • 1 large white onion into small cubes (brunoise)
  • 5 sweet peppers , finely chopped
  • 1 red pepper into thin julienne
  • 1 green pepper into thin julienne
  • 6 sheets coriander
  • 5 cloves garlic , finely chopped
  • 4 tbsp Worcestershire sauce (Worcestershire Sauce)
  • ½ cup stuffed olives sliced
  • 1 cup white wine
  • 3 tbsp oil painted with achiote
  • 2 tablespoons chopped capers
  • 1 cup chicken stock (chicken stock)
  • Olive oil
  • Salt and freshly ground black pepper
