Ingredients
  • 1 Tbsp. butter
  • 1.5 Lbs. beef stew meat , cut into 1 to 2 inch chunks
  • 2 Tbsp. all-purpose flour
  • 5 Cups red wine
  • 1 Tsp. salt
  • subheading: Bouquet Garni:
  • 4 Sprigs fresh thyme
  • 2 bay leaves
  • 8 Sprigs fresh parsley
  • 1 Sprig fresh rosemary
  • 8 Oz. bacon , rind removed and cut into strips
  • 10 shallots, peeled and whole (or halved if large)
  • 1 garlic clove, minced
  • 1 Cup carrots, sliced and peeled
  • 8 Oz. mushrooms, sliced
