Caribbean spiced sweet potatoes
Ingredients
  • 2 ½ lbs sweet potatoes (peeled, trimmed, and cut into 1-inch chunks)
  • 2 TBSP extra-virgin olive oil
  • 2 TBSP honey
  • Juice of 1 lime (about 1 TBSP)
  • 4 cloves of garlic (peeled & finely chopped)
  • ½ tsp cinnamon
  • ½ tsp ground ginger
  • ¼ tsp chili powder
  • ⅛ tsp nutmeg
  • ⅛ tsp allspice
Steps
  1. I just threw into crockpot?
  2. Preheat the oven to 425F
  3. Lightly oil a large roasting pan or foil-lined rimmed baking sheet.
  4. In a large bowl, whisk together the oil, honey, lime juice, garlic, and spices.
  5. Add the sweet potatoes and toss to coat.
  6. Pour the potatoes and seasonings into the roasting pan or baking sheet, and spread them out into a single layer.
  7. Roast the potatoes in the preheated oven, stirring occasionally, for about 40 minutes, or until they are tender and caramelized.
  8. Serve with your dish of choice and enjoy!
