Spiced Carrot, Leek and Lentil Soup
Ingredients
  • 2 teaspoons olive oil
  • 1 medium onion, cut into small dice
  • 1 medium leek, trimmed, cleaned and cut into very thin slices
  • 2 ribs celery, cut into small dice
  • 2 medium carrots, scrubbed well and cut into small dice
  • 1 large clove garlic, crushed
  • 1 teaspoon ground turmeric
  • 1 tablespoon ground cumin, or more as needed
  • 1 tablespoon ground coriander, or more as needed
  • 1 tablespoon harissa paste, or more as needed
  • 4 cups no-salt-added vegetable broth (may substitute chicken broth)
  • 4 ounces (1 cup) dried red lentils
  • ½ teaspoon fine salt, or more as needed
  • 2 tablespoons chopped flat-leaf parsley, for garnish (optional)
  • Greek yogurt, for serving (optional)
