Instant Pot Chicken Pot Pie
Super quick and easy dump meal

Ingredients
  • 1 to 2 lbs of boneless chicken, cut into bite-size pieces
  • ½ cup diced onion
  • 1 heaping tsp minced garlic
  • 3 medium potatoes, peeled and diced into bite-size pieces
  • 1 16 ounce bag frozen mixed veggies
  • 1 or 2 cans cream of chicken soup (depending on how much chicken you use)
  • canned biscuits or Bisquick and milk
  • Salt & pepper to taste
  • Thyme
Steps
  1. Put chicken in bottom of the pot and sprinkle with salt, pepper and thyme.
  2. Add onion and garlic over the chicken.
  3. Add potatoes and lightly sprinkle with salt.
  4. Pour the bag of mixed veggies over the potatoes.
  5. Spread cream of chicken soup over the veggies.
  6. Pour 1 or 2 soup cans of water (can use chicken broth if you prefer) down the sides of the pot, depending on how much cream of chicken soup you used.
  7. Add separated canned biscuits over the top, or mix up 2 ¼ cups of Bisquick and ⅔ cup of milk and drop tablespoons randomly on top.
  8. Cook 8 minutes on manual, quick release and serve.
