Kogen-Style Tsukemono
Ingredients
  • 4 to 6 daikon, washed and peeled
  • ¼ cup Hawaiian salt
  • 4 cups hot water
  • subheading: For the sauce:
  • 2 cups raw or brown sugar
  • ½ cup shoyu
  • ¼ cup vinegar
  • 1 slice peeled ginger, cut into strips
  • 1 chili pepper, peeled, seeded and chopped
