MaMa's Homeade Pimento Cheese
Ingredients
  • -2 lbs Sharp or Mild cheddar cheese (Pre-Grated is recommended, or you can do Velveeta cheese)
  • - 1 7oz jar of pimentos
  • - 1 Quart of mayonnaise ( I use Kraft)
  • - 1 Small Dash of Mustard
Steps
  1. If you like your pimento cheese smooth, take a little bit of cheese at a time and put it in the food processor. Run the food processor until the cheese looks to be in small crumbs.
  2. In a large bowl, mix the cheese, pimentos, mayonnaise and mustard together until the mayonnaise and mustard can no longer be seen. Spread on bread before you chill it, because the cheese will harden.
Notes
  • *These ingredients make about 4 dozen half sandwiches. She made that much when making them for our church. I usually only do half of the recipe instead if it's just for family.
  • (1 lb of cheese, half the jar of pimentos, and 2 cups of mayonnaise)
