Ginger Chicken with Confetti Peach Salsa

  • 1 tablespoon melted butter or olive oil

  • 1 teaspoon  kosher salt
  • ½ teaspoon freshly-cracked  black pepper
  • ½ teaspoon  garlic powder
  • ½ teaspoon paprika (I prefer  smoked paprika)

  • 2 medium peaches, pitted and diced
  • 1 jalapeño, cored and finely-chopped
  • ½ cup finely-chopped fresh cilantro
  • ⅓ cup finely-chopped red bell pepper
  • ⅓ cup finely-chopped red onion
  • juice and zest of 1 lime
  • big pinch of ground ginger and Kosher salt
