Loaded Chicken-Potato Bake

  • 2 pounds boneless, skinless chicken breasts, cut into 1-in. cubes
  • ½ cup plain whole-milk strained yogurt (such as Greek)
  • 1 teaspoon kosher salt
  • 1 red bell pepper, seeded and coarsely chopped
  • 1 small yellow onion, coarsely chopped
  • 4 ounces sharp Cheddar cheese, shredded (about 1 cup)
  • 3 cooked and crumbled bacon slices
  • 3 scallions, thinly sliced
  • Sour cream and hot sauce, for serving
