  • 3 tablespoons olive oil, divided
  • 2 garlic cloves, minced
  • 1 small yellow onion, finely diced
  • 1 teaspoon ginger, minced
  • 1 cup uncooked quinoa
  • 1 can (14.5 ounce) chickpeas, rinsed and drained
  • ½ cup dried cherries
  • 1 ½ cups chicken broth
  • optional: finely chopped cilantro leaves or parsley leaves
