Provençal Vegetable Casserole (Tian)
Ingredients
  • 4 tablespoonsolive oil, divided

  • 2 red pepper, cored, seeded and sliced thinly

  • 1 teaspoonthyme, picked and chopped
  •  
  • ½ stemrosemary, picked and chopped
  • salt and cayenne pepper, to taste

  • 1 large green zucchini, sliced into ¼-inch rounds
  •  
  • 1 large yellow zucchini, sliced into ¼-inch rounds
  •  
  • 1 medium Japanese eggplant, sliced into ¼-inch rounds
  •  
  • 4 to 5 Roma tomatoes, sliced into ¼-inch rounds
  •  
  • 2 stemsbasil, washed and picked
  • A traditional vegetable tian holds a special place in my heart because to me this captures the flavors of what my mother cooks from my father's garden, prepared Provençal-style.
