Pan fried Chicken (marinated)
Ingredients
  • 2 lbs chicken pcs ( I have used breast ,thighs n drumsticks some with skin some without n breast is cut in smaller pcs so it cooks together with rest
  • 1 teaspoon of garlic n onion powder
  • ½ teaspoon of smoked n sweet paprika each
  • ½ teaspoon black pepper
  • ½ teaspoon of oregano n parsley each
  • ¼ teaspoon of thyme .rosemary n basil each
  • ¼ teaspoon salt ( omit for zero sodium )
  • 2 tablespoon extra virgin olive oil

  • mix all the above dry spices together .wash n pat dry the chicken pcs then sprinkle the seasoning on all pcs turning to coat n gently pat even under chicken skin ,pour 1 tablespoon oil over n shake to coat n cover n let it marinate 1 hour
  • heat 1 tablespoon oil in nonstick skillet n swirl to coat the bottom of pan .add chicken pcs in single layer n let it cook on medium high for 5 minutes without turning the chicken as this gives the chicken n a nice caramel color n charring .turn the pcs n cook another 5 minutes turn n at this point depends on how tough or tender your chicken is add water n I have added half cup .lower heat n cover n cook for 15 minutes turning couple times .poke a fork n check if meat is coming off bones n water is left in pan then turn heat to medium n burn off the water n finish cooking n this point you will just have some oily fat in pan n nice browned chicken .turn off heat n serve pcs with your fav sidesSee less
