No-Churn Paleo, Low Carb & Keto Coffee Ice Cream
Use 1 Tbsp honey instead of artificial sweetener, 2 Tbsp ground coffee, 385g coconut milk, 2 lg overripe bananas 2Tbsp Gin, fresh cream,
Strained coffee mixture
Allowed to cool completely.
Added to beaten cream and mixed well.
Ingredients

  • 1 13.5-ounce can full fat coconut milk *
  • 135 to 150 g xylitol or allulose, to taste
  • 3 to 4 tablespoons espresso powder or instant coffee, to taste
  • ¼ teaspoon kosher salt
  • ¼ teaspoon xanthan gum ***
  • 480 g heavy whipping cream
  • 1 teaspoon vanilla extract
  • 2 tablespoons vodka, brandy or booze of choice ****optional, if using erythritol
