Romanian Roasted Eggplant Dip
This recipe closely resembles my mother’s and grandmother’s recipe for ‘Pot-la-jella’ with the addition of fire roasted green peppers
Ingredients
  • 1 large eggplant (~250 gms)
  • 3 cloves garlic
  • 1green pepper (my addition)
  • 1sm onion, chopped (I don’t think my mother’s had onion n it, but could have)
  • 1 tbsp Olive oil
  • 1 tbsp Lemon juice (my addition)
  • Salt , to taste
  • Black Pepper , to taste
Note: Ingredients may have been altered from the original.
