Romanian Roasted Eggplant Dip

This recipe closely resembles my mother’s and grandmother’s recipe for ‘Pot-la-jella’ with the addition of fire roasted green peppers

1 large eggplant (~250 gms)

3 cloves garlic

1green pepper (my addition)

1sm onion, chopped (I don’t think my mother’s had onion n it, but could have)

1 tbsp Olive oil

1 tbsp Lemon juice (my addition)

Salt , to taste

Black Pepper , to taste
