Apple Puff Pancakes
Delightfully light apple filled pancakes.

Servings: 12 4" pancakes

Ingredients
  • 2 Medium apples, peeled, cored and finely chopped
  • 2 Eggs
  • 2 Egg whites
  • ¼ C. Sugar
  • ⅔ C. Flour
  • ½ tsp. Cinnamon
  • ⅛ tsp. Salt
Steps
  1. Beat eggs with sugar until mixture ribbons.
  2. Add flour mixed with cinnamon and salt - stir until smooth. Fold in chopped apples.
  3. Beat egg whites with a pinch of salt until stiff and fold into the apple mixture.
  4. Drop batter onto a hot buttered griddle and brown on both sides, turning once.
  5. Sprinkle with cinnamon sugar or serve with Apple Cider Syrup.
