Blackened Grilled Salmon Skewers

  • 16 bamboo or metal skewers, about 10 to 12 inches, if bamboo soaked in water 1 hour
  • olive oil spray
  • 4 6 ounces skinless salmon filet, diced in 1 inch chunks
  • 1 tablespoon sweet paprika
  • ½ teaspoon dried cayenne pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • ⅛ teaspoon black pepper
  • 3 large lemons
  • chopped parsley, for garnish
